I too cannot get the screw out to fit the new cover, what damage can happen if I just leave it without a new cover

It would depend on if the cover is damaged, the screw is likely to be fitted with a thread locking paint to prevent it coming loose. Use a good fitting 'quality' screwdriver and 'shock' the screw by hitting the screwdriver handle to punch the tip tightly into the screw before trying to turn it. You may need an impact driver if this does not work.
