how can you fit this part?
my freezer has two small 'knobs' sticking out of the walls on which this flap should swivel. However, how would I get the flap over those 'knobs' in the first place?

Check how these 'knobs' are fixed to the wall of the freezer as you can usually unscrew one and fit the flap. If they do not come off warm the flap in a bowl of hot water before fitting on one side and carefully bending to locate the other hinge pin.
